Chef Zee's Keto Cool Berries n' More Salad
Ingredients:
H-E-B Garden Salad Blend (consists of iceberg lettuce, red cabbage and carrots) I cut the salad in bite size pieces using culinary scissors for salad (spinach)
H-E-B Spinach-(handful, finely cut)
Fresh Berries:
Raspberries
Blueberries
Blackberries
Celery- (3) stalks finely chopped
(1) Cucumber, marinated in cilantro lime salad dressing
Shredded Chicken (canned)
Chicken Salad:
(2) Boiled Eggs, chopped
(1) 12.5oz Can of Member's Mark Chicken Breast.
Ranch Dressing- to taste & moisture texture of your liking.
Mustard- according to taste & moisture texture of your liking.
Salt, black pepper & Mrs. Dash Seasoning, according to taste.
Chicken Salad Directions:
Shred chicken breast with a fork in bowl. Combine eggs, dressing and mustard, and mix together, then add spices. Then, I used an ice cream scooper to scoop the portion size amount of chicken salad, to top green salad. This trick is nice for esthetic & fancy look of your salad. Then, top it off with a sprinkle of chia seeds, which is great for fiber & added protein source.
After prepping salad & berries, I like to use a restaurant style salad container, for esthetic look & fancy experience while dining in at home. You'll think you're in a restaurant, while in the comfort of your home in pajamas while watching a great TV show.
Make sure your berries are washed cleaned & thoroughly dried, so veggies are stills crisp & crunchy at consumption.
Only, when Im ready to consume my portion, then will I add the shredded chicken, to avoid salad getting moisture.
I really enjoy this salad, its so yummy, delicious, nutritious and refreshing. You can make as much of this salad as you want or as little as you want. For me, my focus is on portion control, so will make salads small & build it up with ingredients that I like to add to it.
